Strawberry Muffins


It's the time of year when you can buy three baskets of strawberries for $5 at the farmer's market. I currently have enough strawberries for munching and baking and then some!

I remember my mom making a great strawberry muffin recipe when my grandparents came for a Sunday brunch many years ago. So today I called up my mom for the recipe and she knew exactly what I was talking about. Finding it among her cookbook collection was another story. But I have it now, and you have it now, too!


Strawberry Muffins
From Pampered Chef's Recipes from the Heart Cookbook

Batter
2 cups all-purpose flour
1/2 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1 cup chopped fresh strawberries

Topping
1 Tbsp. sugar
1/4 tsp. ground cinnamon

Preheat oven to 400 degrees F. Line 12 medium muffin cups with paper liners, or grease bottoms only. For batter, combine flour, sugar, baking powder, and salt in large bowl. In small bowl, whisk egg, milk and oil. Add to dry ingredients; stir until just moistened. (Batter will be lumpy.) Gently stir in strawberries. Spoon batter into prepared muffin cups, filling each cup two-thirds full. For topping, combine sugar and cinnamon in small bowl; sprinkle evenly over batter in cups. Bake 20-25 minutes or until golden brown. Yield: 12 muffins.

How do you think these would be with a crumb topping? They look great, I may have to give them a whirl after the strawberry patch!!

tiffany k. - they would be delicious with a crumb topping. it's a little more work than a simple cinnamon sugar mixture, though. for my batch, i probably used three times the amount of cinnamon and sugar called for because i like a stronger, sweeter flavor plus the crackly texture of sugar crystals as i bite into the muffin. let me know if you make them!

Mmmm, I got some uber fresh strawberries today, and couldn't wait to make muffins!! I did end up making a streusel topping, and they are yummy. I went a little crazy with the pictures, but here's the link to my flickr set:

We ate up all the muffins, and I still had a quart of fresh strawberries left, so I went searching for something else yummy to make. I came across this little darling, and made it this morning. AMAZING!! Tastes similar to Amish Friendship Bread. I sprinkled the strawberries with sugar in a gallon freezer bag, and let them sit before crushing while I mixed the wet ingredients.

STRAWBERRY BREAD
3 eggs
1 1/2 cups sugar
1 cup salad oil
1 tablespoon vanilla
2 cups flour
1 cup quick oats
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
2 cups crushed strawberries
Cinnamon and Sugar for topping

♥Beat eggs and sugar; add oil and vanilla.
♥Mix in flour, oats, cinnamon, soda, salt and baking powder. Add strawberries and mix well.
♥Pour into two greased and floured 4- x 8-inch loaf pans. Sprinkle with cinnamon and sugar as desired. Bake 1 hour at 350 degrees.
