Celebrate New York With My Friend Christina's Rainbow Cupcakes

I am very excited by the news that New York has just legalized same-sex marriage, becoming the largest state to do so. And while perhaps this political news is out of place on a baking blog, I am going there!

My friend Christina and I go wayyyyy back, back to high school in the Bay Area. Christina is a GREAT baker. And actually, I have to give her extra credit because she is up to just about any challenge to turn a "normal" recipe into a vegan one. It's quite impressive. Well, on her own fabulous blog Tastes Like Yum, she just posted a tribute to this fresh-from-the-oven New York law. Rainbow cupcakes! While her cupcakes are vegan, you can use a dairy yellow cake recipe instead and follow her instructions for creating the rainbow layers. Her pics are very helpful!

Those cupcakes look beautiful! I definitely want to give those a try. I am very happy that New York legalized same-sex marriage. I hope they inspire other states to follow suit.

I too am hoping that California (and everyone else) follows suit soon. Maybe delicious rainbow cupcakes are all it'll take to change some minds... one can hope!

That cupcake looks soooo pretty! And good riddance to the person who posted above...someone who doesn't believe in the beauty of same-sex marriage surely can't appreciate the beauty of your (and your friend's) baking!

Wow, whoever wrote that comment needs to take a chill pill. You are entitled to your beliefs as much as anyone else, but really? If you're going to stop reading a baking blog because of this one post than I wish you all the best. You're probably going to have to stop using a lot of the services you use on a daily basis. Those that provide them may believe in gay marriage, or *gasp* be gay.

To the person who will no longer read your blog, open your eyes, your mind, and your heart to al people in the world, and open your stomach to Marni’s goodness. Hatred has never had positive results. PS I think Marni and Christina are both amazingly talented, I wish I had a bakers bone in me.
